Bolo de Rolo – Brazilian Rolled Cake

Ingredients:

For the cake layers:

  • 1 cup (200g) sugar
  • 1 cup (200g) unsalted butter, softened
  • 4 eggs
  • 1 ½ cups (180g) all-purpose flour
  • 1 teaspoon vanilla extract

For the filling:

  • 1 ½ cups (400g) guava paste (goiabada), melted
  • ¼ cup (60ml) water

For dusting:

  • Powdered sugar (optional)

Instructions:

Prepare the filling:

  1. In a saucepan over low heat, melt the guava paste with water, stirring until smooth. Set aside to cool.

Make the cake batter:

  1. Preheat the oven to 375°F (190°C). Grease and line a baking sheet with parchment paper.
  2. In a bowl, beat the sugar and butter until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. Gradually add the flour, mixing until smooth.

Bake the cake layers:

  1. Spread a thin layer of batter onto the lined baking sheet, smoothing it evenly.
  2. Bake for 5-7 minutes, or until just set but not browned.
  3. Carefully transfer the cake layer onto a clean kitchen towel or parchment paper.

Assemble the Bolo de Rolo:

  1. Spread a thin layer of melted guava paste over the baked cake.
  2. Carefully roll the cake tightly from one end.
  3. Repeat the process, layering more cake sheets and rolling them together to form a spiral.
  4. Let the cake cool completely before slicing.

Serve and enjoy!

Dust with powdered sugar and slice thinly to reveal the beautiful layers. Serve with coffee or tea for a traditional Brazilian treat!
