Ingredients:
For the cake layers:
- 1 cup (200g) sugar
- 1 cup (200g) unsalted butter, softened
- 4 eggs
- 1 ½ cups (180g) all-purpose flour
- 1 teaspoon vanilla extract
For the filling:
- 1 ½ cups (400g) guava paste (goiabada), melted
- ¼ cup (60ml) water
For dusting:
- Powdered sugar (optional)
Instructions:
Prepare the filling:
- In a saucepan over low heat, melt the guava paste with water, stirring until smooth. Set aside to cool.
Make the cake batter:
- Preheat the oven to 375°F (190°C). Grease and line a baking sheet with parchment paper.
- In a bowl, beat the sugar and butter until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- Gradually add the flour, mixing until smooth.
Bake the cake layers:
- Spread a thin layer of batter onto the lined baking sheet, smoothing it evenly.
- Bake for 5-7 minutes, or until just set but not browned.
- Carefully transfer the cake layer onto a clean kitchen towel or parchment paper.
Assemble the Bolo de Rolo:
- Spread a thin layer of melted guava paste over the baked cake.
- Carefully roll the cake tightly from one end.
- Repeat the process, layering more cake sheets and rolling them together to form a spiral.
- Let the cake cool completely before slicing.
