Kibe, or Kibbeh, is a popular dish in Brazil with Middle Eastern origins, especially from Lebanon. It’s a flavorful mixture of ground beef (or lamb), bulgur wheat, and spices, often baked or fried. This Brazilian-style version is baked, making it a healthy, yet still delicious, option for any meal. It has a crispy exterior with a soft, savory filling and is perfect served with a side of yogurt or tahini sauce. Follow this recipe to make your own baked kibe!

Ingredients (Makes 6 servings)

  • 1 cup of fine bulgur wheat
  • 500 g (about 1 lb) of ground beef (or lamb)
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/4 cup of fresh mint, chopped
  • 1/4 cup of fresh parsley, chopped
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground cinnamon
  • Salt and black pepper to taste
  • 2 tablespoons of olive oil or butter (for brushing)

Optional Filling:

  • 100 g (about 3.5 oz) of mozzarella cheese or cream cheese (for a cheesy filling)
  • 1/4 cup of chopped nuts (optional for texture)

  1. Prepare the bulgur: In a large bowl, soak the bulgur wheat in hot water for about 20-30 minutes, or until it absorbs the water and becomes tender. Drain any excess water and set aside.
  2. Make the kibe mixture: In a large mixing bowl, combine the soaked bulgur wheat, ground beef, chopped onion, garlic, mint, parsley, cumin, cinnamon, salt, and black pepper. Mix everything together thoroughly until well combined.
  3. Prepare the filling (optional): If you’re adding cheese or a filling, take a small portion of the kibe mixture, flatten it, place a piece of cheese or a spoonful of filling in the center, and cover it with more of the kibe mixture. Shape it into a small oval or flat disc.
  4. Shape the kibe: Lightly grease a baking dish with olive oil. Press half of the kibe mixture into the bottom of the dish, forming an even layer. If you’re not adding a filling, press the entire mixture into the dish. Brush the top with olive oil or melted butter for extra flavor and crispiness.
  5. Bake the kibe: Preheat your oven to 375°F (190°C). Bake the kibe for about 25-30 minutes, or until the top is golden brown and crispy.
  6. Serve: Let the kibe cool slightly before slicing into squares or ovals. Serve warm with a side of yogurt, tahini sauce, or a fresh salad.
