Ingredients (Makes 4 servings)

For the Chicken Stroganoff:

  • 500 g (about 1 lb) of boneless, skinless chicken breast, cut into strips or cubes
  • 1 tablespoon of olive oil
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup of sliced mushrooms (optional)
  • 1/2 cup of light cream or Greek yogurt
  • 1/2 cup of tomato sauce
  • 1 tablespoon of Dijon mustard
  • 1 tablespoon of Worcestershire sauce
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

For the Brown Rice:

  • 1 cup of brown rice
  • 2 cups of water
  • Salt to taste

  1. Cook the brown rice: Rinse the rice under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add the rice and salt, then reduce the heat to low, cover, and simmer for about 25-30 minutes, or until the rice is tender and the water is absorbed. Fluff with a fork and set aside.
  2. Cook the chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and sauté until soft and translucent. Add the minced garlic and cook for another minute until fragrant.
  3. Add the chicken: Add the chicken strips to the skillet and cook until golden and fully cooked through, about 5-7 minutes. If using mushrooms, add them at this stage and sauté until softened.
  4. Make the sauce: Stir in the tomato sauce, Dijon mustard, and Worcestershire sauce. Lower the heat and let the mixture simmer for 5 minutes. Then, add the light cream or Greek yogurt, stirring well until the sauce is smooth and creamy. Season with salt and pepper to taste.
  5. Serve: Spoon the chicken stroganoff over a bed of brown rice. Garnish with fresh parsley and serve immediately.
