Ingredients:
- 1 cup (200g) white rice
- 1 cup (200g) cooked black-eyed peas (or canned, drained)
- 2 tablespoons olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- ½ cup (100g) diced bacon
- 1 smoked sausage (200g), sliced
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon cumin
- 1 ½ cups (360ml) water or chicken broth
- ½ cup (100g) grated cheese (coalho or mozzarella)
- ¼ cup chopped green onions
- ¼ cup chopped fresh cilantro

Cook the bacon and sausage: In a large pan, heat the olive oil over medium heat. Add the bacon and cook until crispy. Then, add the sliced sausage and cook until browned.
Sauté the aromatics: Add the chopped onion and garlic to the pan, cooking until softened and fragrant.
Cook the rice: Add the rice to the pan and stir to coat it with the flavors. Pour in the water or chicken broth, season with salt, pepper, paprika, and cumin, and bring to a boil.
Combine with beans: Reduce heat to low, cover, and let simmer until the rice is cooked and the liquid is absorbed. Add the cooked black-eyed peas and stir gently.
Add cheese and garnish: Sprinkle grated cheese on top and let it melt slightly. Garnish with green onions and fresh cilantro.
