Brazilian Cheese Bread (Pão de Queijo)

Ingredients:

  • 2 cups (250g) tapioca flour
  • 1 cup (240ml) whole milk
  • ½ cup (120ml) vegetable oil
  • 1 teaspoon salt
  • 1 ½ cups (150g) grated Parmesan cheese
  • 2 large eggs

Instructions:

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Heat the milk, oil, and salt: In a saucepan over medium heat, combine milk, oil, and salt. Bring it to a boil, then remove from heat.
  3. Mix with tapioca flour: Pour the hot liquid over the tapioca flour in a large bowl. Stir well until the mixture is smooth and slightly sticky.
  4. Add eggs and cheese: Let the mixture cool for a few minutes. Then, add the eggs one at a time, mixing well. Finally, fold in the grated cheese until fully combined.
  5. Shape the dough: Lightly grease your hands and roll the dough into small balls (about 1-inch in diameter). Place them on the prepared baking sheet, spacing them apart.
  6. Bake: Bake for 20-25 minutes, or until golden and puffed.
  7. Serve and enjoy! Pão de Queijo is best enjoyed warm, fresh out of the oven.
