  • 1 can (400g) of hearts of palm, drained and sliced into rounds
  • 1 medium cucumber, thinly sliced
  • 1 small red onion, thinly sliced
  • 1 cup of cherry tomatoes, halved
  • 1/4 cup of black olives, sliced (optional)
  • 1/4 cup of fresh parsley, chopped

For the Dressing:

  • 3 tablespoons of olive oil
  • 2 tablespoons of lime or lemon juice
  • 1 teaspoon of Dijon mustard (optional)
  • Salt and black pepper to taste
