Chicken with Okra, known as “Frango com Quiabo,” is a traditional Brazilian dish, especially popular in the state of Minas Gerais. It features tender pieces of chicken cooked in a flavorful sauce with sautéed okra. The combination of the chicken and okra creates a comforting and rustic dish that’s perfect for a hearty meal. Ingredients (Makes 4 servings)

  • 1 whole chicken, cut into pieces or 500 g (about 1 lb) of chicken thighs or drumsticks
  • 1 tablespoon of olive oil or vegetable oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 tablespoon of vinegar or lime juice (for marinating)
  • 500 g (about 1 lb) of fresh okra, cut into 1-inch pieces
  • 2 tomatoes, chopped
  • 1 tablespoon of tomato paste
  • 1/2 cup of chicken broth or water
  • Salt and black pepper to taste
  • 1/4 cup of fresh cilantro or parsley, chopped (for garnish)

  1. Marinate the chicken: In a large bowl, season the chicken pieces with salt, black pepper, and vinegar or lime juice. Let it marinate for 15-20 minutes.
  2. Prepare the okra: While the chicken marinates, heat a little oil in a pan over medium heat. Add the okra and sauté for about 5-7 minutes, stirring occasionally, until it begins to lose its slimy texture. Set the okra aside.
  3. Brown the chicken: In the same pan, add more oil if needed. Brown the marinated chicken pieces on all sides until golden brown. Remove the chicken from the pan and set aside.
  4. Cook the onions and garlic: In the same pan, add the chopped onion and minced garlic. Sauté until soft and fragrant.
  5. Add the tomatoes and tomato paste: Stir in the chopped tomatoes and tomato paste, cooking until the tomatoes break down and form a sauce, about 3-4 minutes.
  6. Combine chicken and okra: Add the browned chicken back to the pan, along with the sautéed okra. Pour in the chicken broth or water, and stir everything together.
  7. Simmer: Cover the pan and let the chicken and okra simmer on low heat for about 20-25 minutes, or until the chicken is fully cooked and the flavors have melded together. Adjust the seasoning with salt and pepper to taste.
  8. Serve: Garnish with fresh cilantro or parsley and serve hot with rice, beans, and polenta on the side for a complete meal.
